No. 11 Chardonnay

Philip Shaw Wines No. 11 Chardonnay is grown in the volcanic soils of the winery's Koomooloo Vineyard at Orange, a cool climate site 900 metres above sea level.
The grapes are hand harvested, crushed, destemmed and pressed. After coarse settling, the juice is typically fermented with indigenous yeasts in French oak barrels. Around one third of the oak is new.
The wine sees partial malolactic fermentation in the spring, followed by 10 months of maturation on fermentation solids. It receives periodic bâtonnage, or lees stirring.
Pale straw, Philip Shaw Wines No. 11 Chardonnay has fresh stone fruit flavours with a distinct citrus line and toasty oak. Cellaring potential is five years.
